The origins of the IPA are long and complex...fortunately, we have time.

Originally, the British shipping beer to the East India Company were having issues where the beer arrived soured. The souring was caused by an aerobic infection caused by mold from the interior of wooden cargo ships. After analyzing the sicknesses of passengers, a shellac was developed using hop oil resin the prevented mold. If anything, I would say that this shellac was rare, but I thought, nah forget it, yo home to BelAir!

This IPA uses grains from Belleville (Barn Owl) and homegrown Cascade hops from Mrs. Erin's Garden in Downtown Ottawa. Drink Fresh.
